Open Bing Webmaster Tools
Go to the sitemap page
Select sitemap
Check the box next to the sitemap you wish to delete then click on the three dots to the right of the site map you wish to delete.
Check the box next to the sitemap you want to delete, then click delete at the bottom of the page.
Click on delete

To submit a sitemap
click on submit sitemap
Enter the sitemap you want to add and click submit.
